DIY 香味照烧鸡

材料:

去骨鸡腿肉300公克香菇适量、山椒粉适量青椒适量红甜椒适量芝麻适量酱油100公克白砂糖50公克米酒50公克

做法:

1. 将调味料拌匀加热,煮至浓稠,量约剩2/3时,煮汁即完成。

2. 鸡肉去除多余的皮与脂肪,并去筋划刀,以防止肉遇热内缩;香菇切去茎部,青椒、红甜椒洗净切成块状备用。

3. 鸡肉撒上少许盐巴腌渍10分钟,再用酒(1:5)洗净以去腥味,将水分沥干后,两面沾上少许酱汁上色。

4. 锅里放少许沙拉油,将鸡肉带皮的部分先煎,转小火将双面煎至7分熟,放入香菇、青椒、红甜椒拌炒,先起锅。

5. 鸡腿肉再入锅,续煎至两面金黄色后,边放酱汁,煎至收汁。

6. 鸡肉起锅后,以刀子切成容易入口的大小,于表面淋上酱汁,撒上山椒粉与芝麻,放上蔬菜即可。
