DIY 风味脆皮鸡

材料:

主料:土鸡1只

A料:白醋300cc麦芽糖100公克水50cc

B料:沙拉油适量、椒盐2大匙、柠檬1/4颗

做法:

1. 土鸡洗净后,用1大匙的椒盐粉涂抹均匀在鸡的表面及腹腔后,静置约20分钟;调味料A混合煮匀成糖醋水后放凉备用。

2. 将法1的土鸡的表皮以沸水淋上4至5次后,再用糖醋水均匀的淋上4至5次。

3. 将法2的土鸡悬吊至通风处让其吹风约3小时晾干表皮后,再将鸡眼戳破,避免鸡放入热油锅中产生油爆。

4. 热一锅,加入足以淹过整只鸡的沙拉油,并将油温烧热至约150℃,将作法3的土鸡放入油锅中,以小火炸约20分钟至熟后,转中火续炸至鸡肉表皮呈现出金黄酥脆感,即可捞起沥干油份。

5. 再将法4的土鸡切块,装盘并挤上柠檬汁,沾椒盐一起食用。
