DIY 酥炸紫米鸡肉丸

材料:

紫米100公克长糯米100公克水180㏄鸡胸肉100公克红萝卜丁适量低筋面粉适量、蛋液适量面包粉适量盐少许细砂糖少许白胡椒粉少许米酒少许太白粉少许

做法:

1. 紫米洗净后浸泡于冷水中约7小时,捞出沥干水分;红萝卜丁?烫至熟,捞出沥干水分,备用。

2. 长糯米洗净后沥干水分,加入作法1紫米和水拌匀后放入电子锅蒸熟,备用。

3. 鸡胸肉剁成泥状,加入调味料搅拌均匀至有黏性,取适量包入作法1红萝卜丁,捏成球状移至蒸笼蒸熟,备用。

4. 取作法3鸡肉丸包上适量作法2米饭,整型成球状,依序沾裹低筋面粉、蛋液以及面包粉,备用。

5. 热油锅至油温约150℃,放入作法4紫米鸡肉丸,炸至外表呈金黄酥脆状即可。
