DIY 豆瓣鲤鱼

材料:

鲤鱼1条(约750克)嫩豆腐1块香葱2棵生姜1块大蒜6瓣尖椒1个香菜1棵淀粉适量食用油100克香油3克酱油6克料酒3小匙辣豆瓣酱30克精盐6克白糖6克味精1.5克

做法:

1. 鲤鱼去内脏、鱼鳞后洗净沥干水,在鱼身的两面划斜刀。

2. 锅内放油烧热,将鲤鱼炸熟后捞出沥油,放入盘中备用。

3. 将嫩豆腐切丁,葱、姜、蒜、辣椒、香菜洗净切末。

4. 锅内放适量油,烧热,先爆葱、姜、蒜、辣椒、辣豆瓣酱,再炝入料酒,放酱油、盐、糖、味精、水,煮沸后加入豆腐丁,煮几分钟后用水淀粉勾芡,再淋上香油,撒上香菜,趁热淋在鲤鱼上即可。
