DIY 花椒鸡丁

材料:

开膛一只、干辣椒10克、花椒3克料酒20克酱油15克盐3克、素油500克白糖10克葱10克姜10克味精1克香油5克鲜汤150克

做法:

1. 鸡洗净后,剔骨。

2. 剁成约2厘米见方的丁,加料酒、酱油、盐、葱节、姜片拌匀,腌渍入味(约35分钟)。

3. 干辣椒擦净,去蒂、籽,切 成约2厘米长的节。

4. 锅置旺火上,下素油烧热(约180-200℃),将鸡丁内葱姜去掉,滗去汁水后,下锅炸至刚熟(鸡丁微带黄色)时捞起,沥干油。

5. 炒锅另 放净素油100克,烧热后,投入干辣椒节、花椒炒出香味,辣椒呈棕红色时,倒入鸡丁,)烹酱油、白糖、料酒和清汤少许,中火收汁,待收干亮油,放入味精、 香油,簸匀起锅。
