DIY 宫保猪肉丁

材料:

主料:瘦猪肉200克

调味料:鸡蛋清30克辣椒(红,尖,干)3克大葱3克白皮大蒜3克姜3克花生油50克、料酒3克白砂糖3克酱油5克、香油2克、豌豆淀粉5克醋3克

做法:

1. 先将猪肉切成厚片,用刀背将肉拍松,在肉上打上纵横花刀,切成1.5厘米见方的丁,放入蛋清和淀粉少许,拌匀。

2. 将拌好的猪肉放入温油(四五成热)里炸,用筷子将猪肉拨动,使其分开,约炸2分钟,即将猪肉捞出。

3. 将辣椒切成末,和姜片、葱、蒜一同放入油锅里,先炒一炒,随即放入料酒、酱油、糖及少量醋,炒至糖溶化,倒入猪肉,同炒半分钟,出锅时,浇一些香油即成。
