DIY 咖哩椰汁鸡炒米粉

材料:

湿粗米粉200公克、鸡腿肉100公克、洋葱30公克、青菜50公克、香茅1根、红咖哩酱1茶匙、水200㏄、椰奶1罐、红椒末少许、盐1又1/2茶匙、糖1/4茶匙。

做法:

1. 湿粗米粉放入滚水中,一滚起就捞出;鸡腿肉切成小块,放入滚水汆烫2分钟捞出;洋葱切片;青菜洗净切段;香茅切碎,备用。

2. 取锅烧热后倒入2大匙沙拉油,放入红咖哩酱炸香,再放入作法1的洋葱片与碎香茅,加入水与所有调味料。

3. 于作法2的原锅放作法1的湿粗米粉与鸡腿肉块,倒入椰奶,盖上锅盖以中火煮至汤汁略收,加入作法1的青菜段炒软盛盘后,撒上少许红椒末即可。
