DIY 卤猪肉

材料:

猪肉2斤老抽4大匙料酒5大匙冰糖5小颗盐适量八角2颗、丁香3颗、香叶3片、桂皮1小段、生姜1小块干辣椒几支

做法:

1. 猪肉洗净,放到容器里,加入料酒,再加入足量的清水,以漫过猪肉为准,浸泡半个小时到1个小时,以去除血水。

2. 锅里烧开一锅水,除盐以外的所有的材料和肉一块放下去,大火烧开,转小火,慢慢卤制半个小时左右,再加入适盐,继续卤制到需要的软硬程度,可以根据喜好自己调节卤制时间。

3. 关火,捞出卤肉到容器中,将卤汁中的香料等捞出,将卤汁倒入装卤肉的容器里,泡着卤肉。待凉,可放冰箱保存。需要食用时,取出适量卤肉和卤汁加热即可。
